Tofu provides high-quality vegetable protein and contains minerals such as calcium, magnesium, potassium and iron. Added to this are phytochemicals, B vitamins and vitamin E. All this makes tofu a healthy meat substitute.
Ingredients for 3-4 servings
For the sliced
- 400 g of tofu
Liquid ingredients and spices
- Coconut oil for frying
- 200 ml vegetable stock (yeast-free)
- 2 tbsp white wine (alternatively 1 tbsp vinegar) (pay attention to vegan quality)
- 3 tablespoons spelled flour or rice flour
- 1 tablespoon of yeast flakes
- 1 teaspoon paprika spicy
- 1 tsp curry
- 1 tsp marjoram
- 3 tablespoons tofu creme fraiche
- 1/2 bunch cilantro
Halve the tofu lengthwise and widthwise, cut into strips.
In a pan, heat 3 tablespoons of coconut oil and fry the tofu strips. Sprinkle with 2 tablespoons of flour, the spices and the yeast flakes over them and stir.
Then deglaze with white wine or vinegar, fill up with the vegetable broth and bring to a boil.
When this liquid is simmered gently after about 3 minutes, remove some liquid, place in a cup and stir with the remaining flour back into the sauce.
Finally, add creme fraiche, season to taste again and sprinkle with coriander.
Note: The longer the sliced simmer, the firmer it gets.
