Chickpeas are not only an optimal source of protein for vegans or vegetarians because numerous studies have come to the conclusion that chickpeas are among the foods that are generally suitable for preventing disease and optimizing health.
Ingredients for 2 servings
For the croquettes
- 500 g boiled chickpeas (from the glass)
- 2 medium potatoes
- 1 bunch of parsley - finely chop
- 1 onion - finely dice
Liquid ingredients and spices
- 1/2 teaspoon cumin
- 1/2 tsp cilantro powder
- crystal salt
- black pepper
- Sesame oil or coconut oil for baking
Peel the potatoes, chop them and cook them in salted water.
In the meantime, place the chickpeas in a sieve and rinse under running water until no more foam is produced. Then purée together with the cooked potatoes.
Put the puree in a bowl, add parsley and onion, season well and mix well.
Form croquettes from the puree and fry slowly in a pan with plenty of oil from all sides until golden brown.
