The nutrients contained in spinach, such as vitamin C, vitamin E or selenium, have an antioxidant effect. Its high vitamin A content also pampers your eyes. Thanks to the large amounts of vitamin K in spinach, leafy vegetables optimize your blood clotting and strengthen your bones.
Ingredients for 2 servings
For the spinach
- 500 g of frozen organic leaf spinach - thaw and drain
- 1 onion - finely dice
- 2 garlic cloves - squeeze
- 1 piece of fresh ginger (about 10 g) - finely dice
Liquid ingredients and spices
- 1 tablespoon ghee
- 2 tsp coriander
- 1 teaspoon cumin
- 1 tsp turmeric
- ½ tsp crystal salt
- Chili powder at will
Heat the ghee in a saucepan and sauté the onion with the ginger cubes. Then add the spices (except salt and chili) and roast briefly while stirring. Also briefly heat the pressed garlic cloves.
Now add the spinach and fill with enough water to cover the bottom of the pot. Stir well and cook over low heat for 15 minutes. If necessary, add a little more water so that the spinach stays nice and moist. Finally salt and season with chili powder piquant.
Perfect with falafel balls, rice or a fine potato puree.
