Celery soup with carrots

Celery has many positive qualities that benefit our organism. So he acts e.g. Diuretic and blood purifying, strengthens the circulation and the nervous system. Prepared as a tea, it relieves flatulence.

Ingredients for 4 servings

For the soup

  • 800 g of celery - diced
  • 350 g carrots - diced
  • 1 onion - diced
  • 2 garlic cloves - pressed

Liquid ingredients and spices

  • 500 ml vegetable stock
  • 200 ml almond cream (eg from EcoMil) or 2 tablespoons almond flour
  • 3 tbsp olive or coconut oil
  • 1 tablespoon of lemon juice
  • 1 Bd. Chives - finely chopped
  • crystal salt
  • black pepper
  • 1 pinch of cayenne pepper

preparation

Preparation time approx. 20 minutes

Heat the oil in a saucepan, fry the onion and garlic over medium heat.

Add the vegetables and sauté, stirring constantly.

Add the vegetable stock and simmer for 10 - 15 minutes on a low heat.

Puree the soup and stir in the cream.

Season with lemon juice, salt, pepper and cayenne. Serve sprinkled with chives.

Note: The soup also tastes great without the cream or the mus and is therefore also low in calories.
