Beetroot rocket salad with walnuts

Beets are rich in betaine, a phytochemical that stimulates the function of liver cells, strengthens the gallbladder and helps keep the bile ducts healthy and clear. In addition, betaine is also known as trimethylglycine (TMG) and this is considered a "mood enhancer" because it can increase the level of our happiness hormone serotonin.

Ingredients for 4 servings

For the salad

  • 350 g boiled beetroot - wash, remove the skin and cut into small cubes (wear rubber gloves, otherwise the fingers will discolour!)
  • 100 g rocket - wash, dry and pluck small
  • 3 red onions - cut in half and cut into thin slices
  • 50 g walnut kernels - finely chop

For the dressing

  • 3-4 tbsp balsamic vinegar
  • 4 tablespoons olive oil
  • 1 teaspoon agave syrup
  • salt and pepper

preparation

Preparation time approx. 20 minutes

Put all the dressing ingredients in a bowl and stir vigorously. Season with salt and pepper.

Put beetroot, rucula, onions and walnut kernels in a salad bowl and add the dressing.

Mix everything well and let it rest for about 30 minutes.

Season again before serving.
