The basic vegetable soup provides the organism with numerous nutrients and vital substances and it does not burden the body in any way, because it is extremely easy to digest. Therefore, this soup is as good as a starter at lunch as well as a main meal in the evening.
Ingredients for 1 serving
For the soup
- 250 g of potatoes
- 2 carrots
- 2 onions
- 1 small stick of leek
- 1 piece of celery
Liquid ingredients and spices
- 500 ml vegetable stock
- 2 tbsp olive oil or coconut oil
- 1 tsp. Tamari (soy sauce)
- Crystal salt and pepper
- 1/2 bd parsley
- maybe some oat cream
Preparation time approx. 35 minutes
Finely chop the onions, peel and wash the potatoes and cut into small cubes. Also wash the leek, halve and cut into fine rings. Peel the carrots and celery and cut into small cubes.
Heat the oil in a saucepan and sauté the onions. Then add the carrot, potato and celery cubes and sauté briefly while stirring.
Douse with vegetable stock and simmer covered for 10 minutes. Then add the leek rings and cook for another 5 minutes.
Season with tamari, salt and pepper, add a dash of oat cream to the soup and remove from heat. Chop the parsley and sprinkle over the soup before serving.
