Buckwheat is an exceptional food. It tastes like a cereal, but it is not. Buckwheat does not have much to do with wheat or other cereals. Buckwheat is not - like the usual cereals - the sweet grasses. Buckwheat is a knotweed, such as sorrel. Consequently, buckwheat is also free of gluten and wheat lectins.
Ingredients for 1 serving
For the groats
- 100 g tender leek
- 30 g buckwheat porridge
Liquid ingredients and spices
- 8-10 tablespoons vegetable stock (without yeast) or water
- 5 g sunflower oil
- 1 Msp Miso
- 1 pinch of crystal salt
Preparation time approx. 35 minutes
Whisk buckwheat with stirring in boiling water, let it swell on low heat. Steam the very finely chopped leek in a little water and mix under the mush. Remove from fire, fold in oil, crystal salt and miso and sprinkle with chives.
