Broccoli contains many vitamins and minerals. The essential trace element chromium is one of the numerous health-promoting ingredients in broccoli. Diseases such as diabetes or high cholesterol levels are associated with a chromium deficiency, but that's only one of many reasons to eat these delicious vegetables as often as possible.
Ingredients for 2 servings
For the soup
- 500 g of broccoli
- Peel 1 onion and chop very finely
- 1 garlic clove - peel and chop very finely
Liquid ingredients and spices
- 150 ml vegetable broth (yeast-free)
- 100 ml oat cream
- 2 tablespoons of coconut oil
- 1/2 teaspoon curry powder
- crystal salt
- black pepper from the mill
- 1/2 bunch of parsley - finely chop
Preparation time approx. 35 minutes
Wash the broccoli, clean and divide into small florets. Peel the stems, chop them and cook in boiling salted water for about 3 minutes.
Now add the florets and cook for about 5 minutes until firm. Remove both with a skimmer from the pot.
Place the broccoli stalks, half of the florets and some cooking water in a tall container and finely puree with a blender.
Then heat the oil and slowly sauté the onion and garlic gently.
Add the vegetable broth, stir in the broccoli puree and the cream and heat briefly.
Season the soup with the spices, add the remaining broccoli and fold in gently.
Serve sprinkled with parsley.
