The Ayurvedic date-ginger chutney is undoubtedly one of the most delicious chutney recipes of Ayurvedic cuisine. Ginger chutney goes well with many dishes, but it tastes great with Dosas. Dosas are thin Indian patties, e.g. made from rice or bean flour. They are filled with the chutney.
For the chutney
- 160 g pitted dates (pitted and soaked in water for 4 to 8 hours)
- 20 g freshly grated ginger
Liquid ingredients and spices
- 2 teaspoons freshly squeezed lemon juice
- 100 ml rose water (optional)
- ½ teaspoon crystal salt
Preparation time approx. 15 minutes
Drain the soaking water of the dates and squeeze the dates slightly to remove excess water. Then chop and mix with all other ingredients in the blender to the desired consistency. If necessary, add water and season with salt and lemon juice.
