Ayurvedic banana curry

For the curry

  • Peel 150 g plantains and cut into small pieces
  • 1 red onion - finely dice

Liquid ingredients and spices

  • 250 ml of coconut milk
  • 1 teaspoon coconut oil
  • 1 teaspoon curry leaves - finely cut
  • ½ mustard seeds
  • ¼ tsp turmeric
  • ¼ tsp crystal salt
  • ¼ TL fenugreek seeds
  • ¼ curry powder
  • salt

preparation

Heat the oil in a saucepan and fry the onion slowly in a glass. Add the curry leaves, fry briefly and then add the banana pieces to the pot.

Add the spices, stir well and deglaze with the coconut milk.

Simmer for 10 minutes. Season again before serving.
