The Japanese original uses leavened rice for sushis. It is rice that is doused with vinegar after cooking. Our sushi is filled with a spicy potato mass. To prepare a mashed potatoes and refine it with spices and a vegan sour cream. Sharpness gives wasabi and vegetable strips of avocado, carrot and cucumber the crisp core of sushi. The result is a truly delicious sushi variety that, along with the extravagant potato salad, will delight even the most discerning vegan lover.

Ingredients for 2 servings

For the sushi

  • 800 ml of water
  • 500 g of floury boiling potatoes - wash, peel and dice
  • 40 g of cucumbers - wash, peel, halve, core with a tablespoon and cut into long strips.
  • ½ avocado - wash, halve, peel, core with a tablespoon and cut into long strips.
  • ½ carrot (about 40 g) - wash, peel and cut into long strips. Blanch in boiling water for 2 minutes.

Liquid ingredients and spices

  • 3 pieces of nori leaves
  • 2 tablespoons vegan sour cream (eg from the health food store of Soyana)
  • 1 tablespoon of apple cider vinegar
  • 1 tbsp yacon syrup
  • 1 teaspoon wasabi paste - mix with 2 teaspoons of water
  • 1 pinch of nutmeg
  • 1 tsp turmeric
  • crystal salt
  • black pepper from the mill

For the sauce

  • 30 ml Tamari
  • 1 tbsp yacon syrup

Preparation time approx. 50 minutes

Boil the potatoes very well in well-salted water, drain over a sieve and keep the liquid in another pan. Then return to the same pot and steam on the stove. Then fill in portions into the potato press and press into a bowl.

Season the potato mixture with vegan sour cream, nutmeg, turmeric, yacon syrup, vinegar, salt and pepper and mix well. Then set the bowl aside.

Lay out 1 Noriblatt on the bamboo mat or the baking paper.

Spread one third of the warm mashed potatoes on the nori leaf and smooth. Leave 1/3 of the area free. Put a thin layer of the diluted wasabi paste over the mashed potatoes and cover with 1/3 of the vegetable strips. Tighten the filled nori sheet with the help of the mat and shape into a roll. Cut the finished roll into slices approx. 3 cm thick. Proceed in the same way with the remaining Norib leaves and place them on plates in portions.

Serve the sushi with the soy sauce.
